Ram Asrey’s Rabri or Rabdi is a dessert simply irresistible in taste. It is a traditional Indian sweet made of thickened sweetened milk filled with layers of clotted cream (malai). Further it is garnished with dry fruits.
Malai: It is made by heating non-homogenized whole milk to about 80 °C (180 °F) for about one hour. Then it is allowed to cool. A thick layer of fat and coagulated proteins forms on the surface, which is skimmed off. The process is usually repeated to remove most of the fat.
